500 g (about 1 lb) chicken thighs or breasts
2 tbsp olive oil
1½ tsp dried oregano (or 1 tbsp fresh, chopped)
3 cloves garlic, minced
Zest of 1 lemon
Juice of 1 lemon
½ tsp salt (or to taste)
¼ tsp black pepper
Optional: ½ tsp paprika or chili flakes
Make the marinade
In a bowl, mix olive oil, oregano, garlic, lemon zest, lemon juice, salt, pepper, and optional paprika.
Marinate the chicken
Add the chicken and coat well. Let it marinate for at least 20 minutes (up to overnight for deeper flavor).
Cook
Pan method: Heat a skillet over medium heat. Cook chicken 5–7 minutes per side until golden and fully cooked.
Oven method: Preheat oven to 200°C / 400°F. Bake chicken for 25–30 minutes, turning once.
Serve
Let rest for 5 minutes. Spoon pan juices over the chicken.
With roasted potatoes, rice, or flatbread
Alongside a Greek salad or steamed vegetables
Drizzle with extra lemon juice before serving
