Lemon Oregano Chicken (Mediterranean Style)

Ingredients (serves 2–3)

  • 500 g (about 1 lb) chicken thighs or breasts

  • 2 tbsp olive oil

  • 1½ tsp dried oregano (or 1 tbsp fresh, chopped)

  • 3 cloves garlic, minced

  • Zest of 1 lemon

  • Juice of 1 lemon

  • ½ tsp salt (or to taste)

  • ¼ tsp black pepper

  • Optional: ½ tsp paprika or chili flakes

Instructions

  1. Make the marinade
    In a bowl, mix olive oil, oregano, garlic, lemon zest, lemon juice, salt, pepper, and optional paprika.

  2. Marinate the chicken
    Add the chicken and coat well. Let it marinate for at least 20 minutes (up to overnight for deeper flavor).

  3. Cook

    • Pan method: Heat a skillet over medium heat. Cook chicken 5–7 minutes per side until golden and fully cooked.

    • Oven method: Preheat oven to 200°C / 400°F. Bake chicken for 25–30 minutes, turning once.

  4. Serve
    Let rest for 5 minutes. Spoon pan juices over the chicken.

Serving ideas

  • With roasted potatoes, rice, or flatbread

  • Alongside a Greek salad or steamed vegetables

  • Drizzle with extra lemon juice before serving
