1. Basmati rice - 2 cups

2. Water - 4 cups

3. Vegetable oil - 1/4 cup

4. Cumin seeds - 1 teaspoon

5. Bay leaves - 2

6. Cinnamon sticks - 2 (1-inch pieces)

7. Cloves - 6

8. Cardamom pods - 8

9. Onion - 1 (sliced) 

10. Ginger-garlic paste - 1 tablespoon 11. Tomato puree - 1 cup 12. Green chili peppers - 3-4 (slit) 13. Garam masala powder - 1 teaspoon 14. Turmeric powder - 1/2 teaspoon 15. Red chili powder - 1 teaspoon 16. Yogurt – 1 cup (beaten) 17. Salt – to taste 18. Fried onions – for garnish 19. Fresh mint leaves – for garnish 20 . Lime wedges – for serving


Instructions:

1) Wash the basmati rice in plenty of water, and soak for   15-20 minutes.


2) Heat oil in a heavy-bottomed pot, add cumin seeds and fry until they start to crackle. 


3) Add bay leaves, cinnamon sticks, cloves and cardamom pods and sauté until fragrant. 


4) Add the sliced onions and fry until golden brown. 


5) Add the ginger-garlic paste and sauté for a few minutes. 


6) Pour in the tomato puree, green chili peppers, garam masala powder, turmeric powder and red chili powder. Stir to combine all the spices into the mixture and cook for 5-6 minutes on medium heat. 


7) Now add the beaten yogurt and stir it into the mixture. Cook for another 2 minutes on low heat. 


8) Drain the pre-soaked basmati rice, add it to the pot with 4 cups of water, salt and mix well together. Allow this to come to a boil on high heat with lid on. When it starts boiling reduce heat to low and simmer for 15 minutes or till all water is absorbed and rice is cooked throughly.  


9) Turn off the heat, fluff up the rice and cover the pot with lid for 10 minutes.


10) Garnish with some fried onions, mint leaves and serve hot with lime wedges on the side.
