What You'll Need:

For Custard Cookies-

2 cups all-purpose vanilla custard powder

1 teaspoon baking powder

1/2 teaspoon baking soda

pinch of salt

1/2 cup (1 stick) unsalted butter, at room temperature

1/2 cup icing sugar

1 teaspoon vanilla extract


For Eggless Custard Buttercream Frosting-

1 cup of Icing sugar or Confectioners' sugar

3/4 cup of Vanilla Custard powder

1 1/2 cups heavy cream

1/2 teaspoon of salt 

6 tablespoons of butter (unsalted) 

2 teaspoons of vanilla extract


Method:

For Custard Cookies-

Preheat oven to 190 degrees Celsius. Butter an 8x8 inch baking pan. Cream together the butter, sugar, and eggs in a medium bowl until light and fluffy. Stir in the vanilla extract. Add the vanilla custard powder, baking powder, baking soda, and salt to the mixture and mix until just combined. Roll the dough into 1-inch balls and place on a nonstick baking sheet. Bake for 10 minutes or until cookies are lightly golden brown. 


For Custard Buttercream frosting-

In a medium-sized bowl, combine icing sugar, heavy cream and butter. Add in Vanilla Custard powder, salt and vanilla extract and mix until well combined. Drop mixture by rounded tablespoons onto the cookies and you're ready to enjoy this sinful treat!
