Vegetable Hot and Sour Soup
Ingredients\n\nVegetables cut into julienne:\n

- 5-6 French Beans\n \t
- medium sized carrots\n \t
- ¼ cup Bean sprouts\n \t
- 1 cup Green Cabbage\n \t
- 1 cup Button mushrooms\n \t
- 1 small Green Capsicum\n \t
- Other Vegetables as per liking and season\n

- 2 tbsp. Vegetable Oil\n \t
- 3 tbsp. Spring onions, chopped\n \t
- 2 tbsp. Ginger Garlic Green chilli crushed\n \t
- 6 tbsp. Dark soy sauce\n \t
- 4 tbsp. Red chilli sauce\n \t
- 5 tbsp. Vinegar\n \t
- 4 cups Water or Vegetable stock\n \t
- Salt to taste\n \t
- ¼ tsp. Sugar\n \t
- ½ tsp. Black Pepper powder\n \t
- 3 tbsp. Tripathi Products Cornflour\n \t
- ¼ cup Spring greens finely chopped\n \t
- 5 tbsp. Red Chilli oil\n

- In a wok heat oil till it starts smoking and add crushed ginger-garlic-green chilli and the sliced vegetables.\n \t
- Toss and stir fry on high flame.\n \t
- Add water/vegetable stock and boil on high flame for 2-3 minutes.\n \t
- Once boiled, add dark soy sauce, white vinegar, red chilli sauce and mix well.\n \t
- Now add salt, sugar, black pepper and stir.\n \t
- Then add the mushrooms and bean sprouts and do not mix.\n \t
- Mix Tripathi Products corn flour with cold water until no lumps are seen and add it to the boiling soup.\n \t
- Stir and add spring greens and red chilli oil.\n
